Disneyland Food & Wine: Lemon Pepper Chicken with High Protein Ranch Dip

While I wish I was in California for Disneyland’s Food & Wine, we are bringing that magic into the kitchen by creating a spin on one of the featured recipes at this year’s festival.

Lemon Pepper Chicken Bites & High Protein Ranch Dip

Ingredients:

Lemon Pepper Chicken Bites

  • 1.5 lbs. chicken breast, cubed

  • 2 Tbsp. olive oil

  • 2 cloves garlic, minced

  • 2 tsp. oregano

  • 2 tsp. thyme

  • 2 tsp. black pepper

  • 1 tsp. salt

  • 1 lemon, juice and zest

Ranch Dip

  • 1 cup cottage cheese 

  • 2 Tbsp Trader Joe’s Ranch seasoning 

    *If you don’t have this seasoning mix, use - 1 tsp. garlic powder, 1 tsp. onion powder, 1 tsp. parsley, 1-2 tsp. dill.

Details: 

  1. Preheat the oven to 350 degrees F. 

  2. In a large mixing bowl add chicken breast, olive oil, spices, and the lemon juice ad zest.

  3. Mix together until chicken is evenly coated.

  4. Add chicken onto a greased or lined baking tray and evenly spread out to ensure even cooking.

  5. Bake for 25-30 minutes depending on oven, util chicken is cooked through.

  6. While chicken is baking, add cottage cheese and ranch seasoning into a high speed blender or food processor. 

  7. Blend on high until smooth. 

  8. Serve chicken with ranch dip as a snack, as part of a meal, or save both until later if prepping ahead of time!
