Monster Cookie Protein Bites

The perfect mash of a cookie bite!

Okay, not into the Monster Mash mood? You will be after trying these protein cookie bites! Monster cookies are top of the list for nostalgic sweet treats in my book & these little bites are the perfect mix of the sweet, candied treats we love & some real food nutrition.

I love having little pop-able bites on hand that function as a snack, pre-workout bite AND a sweet tooth satisfier — and protein bites are a great way to get that done! I mixed in a scoop of cookies & cream protein powder to gives these an extra cookie-like taste & boy did they turn out delicious! The protein powder is totally optional if you’d rather skip it — You might not need as much maple syrup if you do, or you can always add 1/4 cup extra oats!

Grew up with a more complex monster cookie?? Feel free to add in whatever extra ingredients your heart desires into these! I kept it simple with the classic oatmeal, M&M’s cookie vibe, but mixing in some nuts, raisins or plain chocolate chips would also make these bites flavor & nutrition packed, and totally custom to how you like!

Monster Cookie Protein Bites

Prep Time: 30 minutes
Servings: 20 bites

INGREDIENTS

  • 1 c quick oats

  • 1/4 c flaxseed meal

  • 1/2 c peanut butter, smooth

  • 1/2 c maple syrup

  • 1 tsp. vanilla extract

  • 1/2 c mini M&M’s

  • 1 scoop protein powder (optional)

INSTRUCTIONS

  1. In a medium mixing bowl, add the oats, flaxseed meal, peanut butter, maple syrup, vanilla extract & protein powder.

  2. Mix together with a spatula until one cohesive mixture.

  3. Fold in the mini M&M’s until evenly dispersed.

  4. Pop the mixing bowl into the refrigerator for 5-10 minutes to let the mixture come together.

  5. Remove from the fridge and use hands to scoop and roll mixture into bite sized balls (approx. 1 inch in diameter).

  6. Store in an air-tight container in the fridge for up to 7 days, or toss in the freezer for longer storage.
